Feel the love for healthy beet pancakes
Love is in the air. This is the month for showing loved ones how much you care for them.
I show love with food. It makes me very happy to plan and prepare healthy and nutritious meals for my family and friends. Knowing that I am offering foods that are not only nutritious but also fun, makes my time in the kitchen well worth it. Pancakes are the perfect dish for trying new fruits and vegetables. Most children are willing to try new foods that have pleasant colors and that are visually appealing. Using pureed foods allows for added nutrition and a fun palate for decorating. Make these special pancakes on Valentine’s Day and your family will leave the house full of love.
Feel the Love Beet Pancakes
What you’ll need
- 1 medium beet, roasted and peeled
- ½ cup almond milk for beet puree, plus 1 cup for the pancake batter
- 2 cups whole grain spelt flour
- 1 tablespoon aluminum-free baking powder
- 1 tablespoon ground flaxseed
- 1 tablespoon coconut sugar or sugar of your choice
- ½ teaspoon allspice
- ½ teaspoon sea salt
- 1 tablespoon organic plain yogurt
- 1 egg
- Beet puree
How to make it
In a blender combine the roasted beet and ½ cup of almond milk. Blend until pureed. In a large mixing bowl, add all the dry ingredients and whisk together. Add the wet ingredients including the beet puree and whisk until well combined. Use 1⁄3 cup pancake batter and prepare the pancakes on a heated griddle. Top with real butter, pure maple syrup and berries.
The bottom line
Beets don’t have to be scary. Refrigerate leftover pancakes and toast to reheat.
