Our house is bustling with friends and family beginning Thanksgiving Day and continuing through the entire holiday weekend.
We love it. As it turns out, preparing food and serving others is our special gift. It’s a family affair and we treasure it. The kids jump right in and assist wherever they are needed. Our oldest son has become a whiz at chopping vegetables and the little one stirs all types of batters.
The noise and sounds in the kitchen quickly become the backdrop music that generates laughter and happiness. This banana walnut bread has become a favorite. I originally created the recipe to use up a few very ripe bananas, and now it is a family staple. The simplicity and ease of this recipe will allow you to focus your energy on other dishes that require more hands-on time.
Banana Walnut Bread
What you’ll need
- 2 very ripe bananas
- 1 cup whole grain oats, ground
- ½ cup whole spelt flour
- 1 teaspoon aluminum free baking powder
- 1 teaspoon baking soda
- 1 tablespoon flaxseed meal
- Pinch sea salt
- ¼ cup pure maple syrup
- ¼ cup coconut oil, melted
- 1 teaspoon vanilla extract
- ½ cup raw walnuts, chopped
How to make it
In a large mixing bowl add the bananas. Using a fork, stir the bananas until they are pureed. Add the dry ingredients. Add the wet ingredients to the dry and stir until combined. Add the walnuts and stir until incorporated. Pour the batter into a greased loaf pan. Bake at 350 for 20 – 25 minutes or until edges are golden brown and an inserted knife comes out clean. Cool completely on a rack before cutting.
The bottom line
This recipe can easily be turned into muffins and packed in a school lunch for a delicious mid-morning snack.
